I ordered the 4 taco combo from their truck. Then I drove home to realize they did not give me any hot sauce. So I drove back. Then I went back home and the first bite I took nearly cracked my teeth. A metal clip was in my taco. When it's bad, it's bad. Taco was pretty good. But I definitely will not be buying from their taco truck in Palestine.

1st time here and i want to start with we ate everything and it was pretty good, not what we ordered but good(SALSAS WERE GOOD TOO) , came all the way from shreveport to tyler for work, place that was recommended was closed so the next option was here. we came in and the register lady was nice and took our order, we got our drinks and sat down food came out fast. 1 girl just came and dropped off 2 plates of birria tacos but we didn’t order birria so we waited for sb to come back because the third person was waiting for their tacos too. we asked when she came with the last tacos if these were ours and she double checked the receipt and went to the lady who took our order to confirm, because mistakes happen. original lady who took our order came to the table and said “these are the birria tacos” and we told her “no we ordered barbacoa” and she said “well that’s barbacoa that how we serve it” and then walked away? we aren’t the type to complain but if you know that the way you serve isn’t the regular way i mean i’ve been and worked at other restaurants and i always tell my customers okay so we do this and have that, regular to avoid any misunderstandings. we are also not the type to s

Ruby's has become our go-to food truck whenever we're craving authentic Mexican food. We come back regularly for the birria tacos, and they never disappoint. The tacos are perfectly crispy, packed with tender, flavorful meat, and served with a rich consommé that's absolutely amazing for dipping. The quality is always consistent, the portions are generous, and everything tastes fresh. You can tell they take pride in their food. The staff is friendly, the service is quick, and every visit has been a great experience. If you're in the Tyler area and haven't tried Ruby's yet, you're seriously missing out. Their birria tacos alone are worth the trip, and it's easy to see why they've become such a local favorite. Highly recommend!

I first tried Ruby’s at the East Texas State Fair and was genuinely impressed. The food was definitely on the expensive side, but it was flavorful, fresh, and felt worth the splurge for a fair experience. Because of that, I was excited to visit their actual restaurant and expected a similar experience. Unfortunately, the visit to the restaurant was disappointing. The food just wasn’t nearly as flavorful as what I remembered from the fair. I ordered a burrito, and while the portion size was decent, it was surprisingly bland and lacked the seasoning and flavor that made me want to come back in the first place. Nothing was necessarily bad, but it wasn’t memorable either. I was also surprised that chips and salsa weren’t included. For the price point, I expected a little more value and a better overall dining experience. The cost felt high compared to the quality and flavor of the food we received. That said, one visit isn’t always enough to judge a restaurant completely. Since I had such a positive experience at the fair, I’d be willing to give Ruby’s another try in the future. However, based on this visit, it wouldn’t be my first choice when paying out of my own pocket. I left fee

If you haven’t been here you are sleeping on the most flavorful Mexican food in Tyler Tx! The flavors are so rich and bold that you just want yo keep eating. The serving sizes are huge and thats always a good thing! The house lemonades are made fresh and absolutely incredible. The service is fast and everyone is super helpful. Don’t sleep on this little place because you are missing out if you pass it by and thats a fact!
